METHOD:
Preheat oven to 350°F.
In a small bowl, melt 3/4 cup of bittersweet chocolate chips and butter in the microwave.
Stir and set aside to slightly cool.
In another bowl, combine sugars, eggs, and vanilla extract.
Once the melted chocolate has cooled, add it to the sugar mixture and mix well.
Stir in the flour, salt, chocolate chips, and walnuts.
Pour the batter into a parchment-lined 8x8 baking dish, and bake for about 35-40 minutes, or until an inserted toothpick comes out clean.
Set aside to cool.
Make the ganache: heat heavy cream and butter in a saucepan.
Then pour the hot cream over chocolate chips in a heat-proof bowl.
Let sit for 5 minutes and then stir until well combined.
Add stout beer and mix again.
Cut cooled brownies into squares and dip the surfaces into the ganache.
Set aside and allow the ganache to set.
In a small saucepan, combine the stout beer, sugar, cocoa powder, espresso, and salt and bring to a slight boil.
Set aside to cool.
To serve, slice the brownies and serve on a platter.
Top with ice cream, whipped cream, chocolate sauce, crushed peanuts, sauce, and a maraschino cherry.
