Fudgey Pumpkin Flourless Black Bean Brownies

INGREDIENTS:

  • 1 (15 ounces) can black beans, rinsed and drained
  • 1 tablespoon apple cider vinegar
  • 1/2 cup organic pumpkin puree
  • 3 tablespoon coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/3 cup pure maple syrup
  • 1/2 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/2 cup dark cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon sea salt
  • 2/3 cups dark chocolate chips, plus more for topping


  • METHOD:

    Preheat oven to 350 degrees F and grease an 8x8 inch baking pan.

    Combine all ingredients in the food processor except chocolate chips.
    Process until very smooth.

    Pour into a large mixing bowl and then fold in chocolate chips.

    Pour the batter into the prepared baking pan and top with more chocolate chips.

    Bake for 20-22 minutes.

    Remove from oven and let cool in the pan.
